A story of French pastry, passion and transmission across three generations.
Pastry has always been part of my life. It is a family story — of repeated gestures, of exacting standards passed down and of shared indulgence. A legacy shaped through generations, between French tradition and contemporary creativity, which I carry forward today with the same passion.
My passion for pastry has its roots in Normandy. My grandfather was already an accomplished pastry chef, driven by a love of craftsmanship and respect for quality ingredients.
He ran the Auberge Normande in Briouze — a warm and welcoming inn where homemade desserts held a special place. The sweet aromas, the precise gestures, the care given to wedding cakes and grand occasions were already part of daily family life.
It is in this spirit of transmission, authenticity and sharing that this story began.


My parents wrote a major chapter of this adventure by running a pastry shop in the Principality of Monaco for over 35 years.
I grew up in that world, surrounded by a naturally sweet and chocolatey atmosphere, where the smells, the techniques and the demands of the craft were part of everyday life.
My father, widely recognised for his expertise, was during that time the official supplier to Prince Rainier III and was awarded Best Pastry Chef of the Year 2000 by the Champérard Guide.
It was during the fifteen years spent working alongside them that I truly learned this craft — with precision and a commitment to excellence.




In Menton, I chose to forge my own path — first at the municipal market halls, then by opening my own Salon Gourmand on the Esplanade des Sablettes.
A demanding entrepreneurial journey, shaped by hard work, self-questioning and passion — throughout which my wife Claire was always by my side. Her unwavering support, her help and her presence, even in the most challenging moments, were essential to making this project a success.
Our twins would occasionally come in to lend their dad a hand, in a joyful, family atmosphere — simply for the pleasure of sharing those moments together.
That chapter in Menton left a deep mark on my journey. It is the foundation on which everything that followed naturally grew.





Now based in Mauritius, I continue this family tradition by offering an exceptional French pastry experience, crafted entirely to order.
Weddings, private events, corporate clients or hotels — each creation reflects this journey: heritage, artisanal standards and an enduring passion.
